Ramadan Recipes: Chebab

Chebab is the Emirati version of pancakes. It closely resembles regular pancakes but has a slightly thicker consistency and includes yeast, cardamom, and turmeric in the dough. To prepare Chebab, a special baking device called a Khameer is used. This bread is a popular choice for breakfast and Sohour during the month of Ramadan.

  • Ingredients

1.2 L Warm Water
200 g Sugar
1/4 tsp Dry Yiest
1 tsp Salt
1/2 tsp Turmeric
1 tbsp Cardamom Powder
200 g Flour no. 1
800 g Flour no. 2
Garnish
1 tbsp Cream Cheese
1 tbsp Honey or Dates Syrup

  1. Preparing the Chebab batter

    In a large bowl, mix together 1.2 litres of warm water, 200 gms of sugar, 1/4 tsp of dry yeast, 1 tsp salt, and 1/2 tsp of turmeric. Add one egg to the mixture and whisk well and let it rest for 10 minutes
  2. Adding Cardamom Powder and Flour to the Chebab Batter Mixture

    After 10 minutes, add 1 tbsp of cardamom powder and 200 gms of flour no. 1 to the mixture. Mix well
  3. Resting the Chebab Batter

    Next, add 800 gms of whole wheat flour to the mixture and mix until you get a smooth batter. Then, seal the batter and let it rest for 2 hours at room temperature
  4. Refrigerate the batter for 4 hours

    After 2 hours, refrigerate the batter for 4 hours. Once the batter has rested, it will be thick and ready to be cooked
  5. Preparing the Pan and Pouring the Batter

    Heat a nonstick frying pan and spray some butter on it. Pour the batter onto the pan in the shape of a pancake and allow the batter to dry out on medium to low flame
  6. Cooking the Chebab

    Flip the Chebab and cook on the other side as well
  7. Serving the Chebab

    Serve the Chebab on a plate and add cream cheese, honey or date syrup according to your taste
