Ramadan Recipes: Veal Piccata

Veal piccata derives its name from Italian, which means "to be pounded flat." It goes well with rice, pasta, and vegetables such as mushrooms, or fluffy mashed potatoes.

Veal Piccata
8 veal cutlets, flattened
1/2 cup all-purpose flour
salt and white pepper to taste
2 teaspoons garlic powder
4 tablespoons vegetable oil
1 cup beef or chicken stock
1 tablespoon lemon juice
2 tablespoons capers
2 tablespoons unsalted butter
2 tablespoons fresh thyme leaves
1 tablespoon cornstarch

  1. Coat the veal cutlets in flour

    Combine the flour, garlic powder, salt, and pepper on a plate, and dredge each veal cutlet in the flour mixture and shake off excess.
  2. Cook the cutlets

    Heat the oil in a pan over medium-high heat for 2 minutes, cook the cutlets for about 2-3 minutes on each side until they are nicely browned, then remove them from the pan and set aside while you make the sauce.
  3. Prepare the sauce

    Add chicken broth to the same pan where you cooked the veal and bring to a boil, then add capers, lemon juice, fresh thyme, butter, and cornstarch. Adjust seasoning with salt, then reduce heat to low and add veal back in to simmer for 10 minutes.
  4. Serve

    Serve 2 cutlets per person, add the sauce generously on top, and garnish with lemon slices.
