Ramadan Recipes: Malfouf

Malfouf is a classic dish consisting of cabbage rolls traditionally stuffed with rice and minced meat or rice and fresh herbs, and wrapped into rolls. It is a delicious Mediterranean dish.

Malfouf
1 head green cabbage/malfouf
250g short-grain rice
250g minced beef
2 medium finely chopped onions
500g chopped tomatoes
2 tsp tomato purée
3 tbsp finely chopped mint
2 tbsp lemon juice
140ml beef stock
4 garlic cloves
salt and black pepper to taste

  1. Prepare the malfouf

    Carve out the cabbage root then add the head of the cabbage to a pot of boiling water with salt, allow it to boil for a few minutes, then start to loosen the leaves using a pair of tongs. Place the leaves on a paper towel-lined tray to drain and cool, then cut away the thick rib in the middle of the leaf.
  2. Prepare the filling

    Put the olive oil in a saucepan over medium heat, add the onions, and stir until it's translucent, then add the beef and cook for 5 more minutes, add tomatoes, purée, rice, mint, salt, black pepper, and lemon juice. Simmer for about 7 minutes, until almost all of the water is absorbed.
  3. Stuff and roll malfouf leaves

    Open up the leaf flat on a cutting board and add a teaspoon of stuffing at the bottom end and spread it out slightly, then tightly roll the leaves up, maintaining a tight grip.
  4. Finish the dish and cook

    Place the rolled malfouf leaves into a cooking pot, with sliced tomatoes or a few cabbage leaves placed at the bottom. Pour over the stock, sprinkle over the garlic cloves, place a plate inverted on top, cover the pan, and leave it until the rice is fully cooked.
