Basbousa is a semolina cake with yogurt filled with coconut and soaked in a sweet, sugar-based syrup called attar. It is one of the most popular desserts in the Middle East and North Africa, Greece, and Turkey. Basbousa is a one-bowl, mix-, and-dump kind of recipe.

Basbousa
2 cups semolina flour
½ cup unsweetened coconut flakes
⅓ cup sugar
½ cup melted butter
½ cup plain yogurt
1 tablespoon baking powder
1 pinch salt
nuts for garnishing
Attar
2 cups sugar
1 cup water
1 tablespoon lemon juice

  1. Prepare Basbousa

    In a large bowl, combine the dry ingredients: semolina, coconut flakes, sugar, salt, and baking powder, then add melted butter, yogurt, and mix.
  2. Garnish and bake it

    Grease a baking dish and dust with flour, then pour the mixture, and spread nuts on top to decorate, then bake in a preheated oven at 400 F (200°C ) for 30-35 minutes, until it is golden brown.
  3. Prepare attar

    Combine the sugar and water in a saucepan, and bring the mixture to a boil over medium heat, add lemon juice, and stir the mixture constantly until the sugar is dissolved and the mixture is thickened, then remove from heat and let it cool down.
  4. Soak Basbousa in attar and serve

    As soon as the Basbousa comes out of the oven, pour the cooled attar over it evenly. Allow to cool completely before cutting it, then serve it.
